Pasta cu pisìedde da nonna

Pasta cu pisìedde is a recipe that my Nonna used to make. It is not pasta but more a soup with peas, tomatoes and big pieces of minced meat. Nobody knows where she got it from, but it's a family favourite. It is a comforting, hearty soup, one that makes you happy when you enter the house. It is not sophisticated at all, but for us, it is unique. That is why I like to share it with you.

INGREDIENTS

  • a big splash of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • Heart of green celery, finely chopped
  • 3 potatoes, chopped into cubes
  • 500gr of peas
  • 1-litre passata di pomodoro
  • 2 1/2 litres of meat or vegetable stock
  • 500 gr mixed minced meat
  • pepper, salt and sugar
  • 150gr spaghetti
  • a handful of basil leaves

HOW TO MAKE IT?

Heat the olive oil in a large pot and fry the onion, garlic, celery and potatoes. A few moments later, add the peas. When everything is sautéed, add the passata di pomodoro and the stock.

Now add the minced meat little by little. You want chunks, not meatballs—season to taste with salt and pepper and add half a teaspoon of sugar.

Leave to simmer for around 45 minutes on low heat with the lid open.

Now take the spaghetti and break them at inch length. Ten minutes before the soup is ready, put the pasta in the pot and let it cook until tender.

At the end, add the basil. Stir everything one last time, and you are ready to eat.
