Paccheri, pronounced "pakkeri" is a tube like pasta coming from the Campania region and often paired with heavier sauces.

The shape brings a funny story of Italian garlic farmers smuggling garlic in the tubes after the import of their produces was banned by the Austrian government to protect their own farmers.

Molini del ponte uses, Perciasacchi, which is one of the "ancient Sicilian grains", already cultivated in the early 800s on the island of Sicily. Its high nutritional value characterises it. Coming from organic farming and certified seeds, Perciasacchi flour has a high protein content. It is rich in minerals, fibres, vitamins and, is easily digestible and low in gluten.
