Meet colatura di alici, a delicious sauce based on anchovies. Colatura is the closest to Asian fish sauce but more complex in taste and less fishy than the Asian version. I use this sauce constantly in my kitchen. Not necessarily to add a fishy touch, but to make the dish more hearty.
Tip: Add a teaspoon of colatura to your cacio e pepe, tomato sauce, sauteed vegetables, potato salad or fish dish or anything that needs an extra kick. And since love goes through the stomach, your dish might not be the only one that gets a little extra spice... 😏
